German Bienenstich with Vanilla Cream & Almond Caramel

A tender yeast cake bakes beneath a crackly honey-almond crown, then splits around a stable vanilla pastry-cream filling for a bakery-worthy celebration slice.

Directions

  1. Mix and knead the dough

    Combine flour, yeast, sugar and salt in a mixer bowl. Add warm milk and eggs; mix on low until shaggy. Knead with the dough hook 4 minutes, then add softened butter a tablespoon at a time. Knead 6 to 8 minutes more until smooth, elastic and slightly tacky.

  2. Let the dough rise

    Transfer to a lightly buttered bowl, cover and rise in a warm place for 60 to 90 minutes, until doubled. Meanwhile, butter and flour a 9-inch springform pan and line the base with parchment.

  3. Prepare the vanilla pastry cream

    Bring milk, 1/4 cup sugar and vanilla bean and seeds to steaming. Whisk yolks, remaining 1/4 cup sugar and cornstarch in a bowl. Slowly whisk in half the hot milk, return everything to the saucepan and cook over medium, whisking, until thick and bubbling. Boil gently for 1 minute; it should register at least 180°F. Remove the pod and whisk in butter.

  4. Chill the custard

    Spread pastry cream in a shallow dish, press wrap directly onto the surface and cool 20 minutes. Refrigerate at least 2 hours, until thoroughly cold.

  5. Shape and proof

    Press risen dough evenly into the prepared pan. Cover and proof 30 to 45 minutes, until puffy and nearly doubled. Heat the oven to 350°F.

  6. Cook the almond caramel

    Melt butter, sugar, honey, cream and salt in a saucepan over medium. Bring to a gentle boil for 2 minutes, stirring, then fold in almonds. Cool 5 minutes and spoon evenly over the proofed dough without pressing it down.

  7. Bake and cool completely

    Bake 27 to 32 minutes, until the almond top is deep golden and the cake center reaches 190–195°F. Cool in the pan 15 minutes, release the sides and cool completely on a rack for about 90 minutes.

  8. Lighten the filling

    Whisk the cold pastry cream until smooth. Whip cold cream with confectioners' sugar to medium peaks, then fold it into the pastry cream in three additions. Keep chilled until assembly.

  9. Split without cracking the crown

    Use a serrated knife to slice the cake horizontally. Lift off the top and cut it into 12 wedges before filling; pre-cutting prevents the brittle almond caramel from crushing the cream later.

  10. Fill, chill and serve

    Set the bottom layer on a platter and spread the vanilla cream evenly to the edge. Arrange almond-topped wedges over the cream to reconstruct the crown. Chill 45 minutes, then slice between the pre-cut wedges for the photographed layers.

Easy swaps

  • Use vanilla extract after the custard comes off heat if a vanilla bean is unavailable.
  • Pastry flour can replace up to one-third of the all-purpose flour for an even softer crumb; do not use cake flour alone.
  • For a nut-free variation, use a thin honey-oat streusel, but label it as inspired by Bienenstich rather than traditional almond-topped cake.

Cook notes

  • Total time includes both dough rises, baking, full cooling, custard chilling and a 45-minute assembly chill.
  • Warm milk above 120°F can weaken yeast; use a thermometer and stay within 105–110°F.
  • Cook pastry cream to at least 180°F and a full gentle bubble, then chill promptly in a shallow dish.
  • The almond caramel is extremely hot when cooked. Keep hands and children clear until it cools on the baked cake.
  • A 9-inch springform pan creates the tall layer proportions shown in the photograph.

Storage

Keep assembled cake covered and refrigerated for up to 3 days because of the custard. Let slices stand 15 minutes before serving. Freeze the unfilled baked cake for up to 2 months; thaw before splitting and filling. Do not freeze the assembled cream cake because the filling can weep.

Questions

Why did the almond topping slide off?

The dough may have over-proofed or the topping was too hot and fluid. Cool caramel for 5 minutes, spoon it gently over puffy—not collapsing—dough and bake immediately.

Can I make Bienenstich a day ahead?

Yes. Assemble it the evening before, cover and refrigerate. The cream sets neatly and the almond top remains pleasantly chewy-crisp for the next day.

Why is my pastry cream lumpy?

Eggs heated too quickly or the starch was not whisked continuously. Press the hot custard through a fine sieve, then cover its surface before chilling.
