Miso-Sesame Tofu & Broccoli Bowls
Crisp tofu, broccoli, corn, cucumber, and carrots with a savory-sweet miso sesame dressing.
Directions
Crisp the tofu
Toss pressed tofu with cornstarch and oil. Bake at 425°F for 20 to 22 minutes, turning once.
Roast the broccoli
Add broccoli to a second pan or alongside tofu for the final 14 minutes, lightly oiled and salted.
Whisk the dressing
Mix miso, soy sauce, rice vinegar, maple syrup, sesame oil, ginger, and 2 tablespoons warm water.
Prep the toppings
Warm corn and chop cucumber and carrot.
Build
Layer rice, tofu, broccoli, corn, cucumber, and carrot. Drizzle generously with miso dressing and sesame seeds.
