Roasted Sweet Potato Ginger Soup
Velvety roasted sweet potato soup with ginger, warm spices, lime, and crunchy pepitas.
Directions
Roast the vegetables
Heat oven to 425°F. Toss sweet potatoes, carrot, and onion with oil and a pinch of salt. Roast 25 to 30 minutes until deeply browned.
Bloom aromatics
Add ginger, garlic, cumin, and paprika to a soup pot with a teaspoon of oil and cook 45 seconds.
Simmer
Add roasted vegetables and broth. Simmer 8 minutes.
Blend
Blend until completely smooth, then stir in coconut milk.
Balance
Add lime juice, salt, and pepper. Serve with pepitas and herbs.
