Directions
Brown the tofu
Sear tofu in oil in a Dutch oven until golden on several sides. Transfer out.
Bloom the curry
Add curry paste, ginger, and garlic to the pot. Cook 45 seconds.
Build the broth
Add vegetable broth, coconut milk, soy sauce, and brown sugar. Simmer 8 minutes.
Cook noodles
Add ramen noodles and greens. Cook just until noodles are tender.
Finish
Return tofu, add lime juice, and serve with scallions, cilantro, and chili oil.
