Swaps & notes

Easy swaps

  • Use white beans or lentils.
  • Frozen spinach works; thaw and squeeze it first.
  • Add cauliflower florets with the liquid and simmer until tender.

Cook notes

  • Curry powders vary. Start with 1 1/2 tablespoons if yours is hot.
  • Full-fat coconut milk gives the best body.

Storage

Refrigerate up to 5 days or freeze up to 3 months. Coconut sauce may look separated after thawing but comes together when stirred over heat.

Questions

Can I make it without coconut milk?

Use 1 1/2 cups broth plus 1/2 cup cream or an unsweetened dairy-free creamer.

Why is my curry bland?

It usually needs more salt, acid, or time. Add salt and lime first, then simmer 5 minutes longer.

Can I add meat?

Brown diced chicken before the onion, then simmer until fully cooked.
