Roasted Garlic Primavera Linguine
Light, garlicky linguine loaded with zucchini, mushrooms, peppers, tomatoes, and herbs instead of a heavy cream sauce.
Directions
Cook pasta
Boil linguine until al dente and reserve 1 1/2 cups pasta water.
Brown mushrooms
Heat 1 tablespoon oil in a wide skillet. Brown mushrooms without stirring constantly.
Cook vegetables
Add remaining oil, zucchini, pepper, and tomatoes. Cook until just tender.
Build the sauce
Stir in roasted garlic, red pepper flakes, 3/4 cup pasta water, lemon zest, and Parmesan.
Toss
Add linguine and toss vigorously. Finish with lemon juice, herbs, black pepper, and more pasta water as needed.
