Directions

  1. Cook pasta

    Boil linguine until al dente and reserve 1 1/2 cups pasta water.

  2. Brown mushrooms

    Heat 1 tablespoon oil in a wide skillet. Brown mushrooms without stirring constantly.

  3. Cook vegetables

    Add remaining oil, zucchini, pepper, and tomatoes. Cook until just tender.

  4. Build the sauce

    Stir in roasted garlic, red pepper flakes, 3/4 cup pasta water, lemon zest, and Parmesan.

  5. Toss

    Add linguine and toss vigorously. Finish with lemon juice, herbs, black pepper, and more pasta water as needed.
