High Protein
Turkey Taco Stuffed Sweet Potatoes
Sweet, smoky, creamy, crunchy—these loaded potatoes hit every note and quietly deliver a high-protein dinner.
Directions
Cook the potatoes
Pierce sweet potatoes and microwave 8 to 12 minutes, turning halfway, until tender. For crisper skin, finish 8 minutes in a 425°F oven.
Brown the turkey
Heat oil in a skillet. Cook turkey and onion until browned, breaking the meat into crumbles.
Season
Add taco seasoning and water. Simmer 3 minutes, then stir in beans, corn, and salsa until hot.
Make lime yogurt
Mix Greek yogurt with lime zest, 1 tablespoon lime juice, and a pinch of salt.
Stuff
Split potatoes, fluff the centers, and pile in turkey mixture. Add lime yogurt, avocado, cilantro, and more salsa.
Why this works
Swaps & notes
Easy swaps
- Use ground beef, chicken, or lentils.
- White potatoes work just as well.
- Add shredded cheese or pickled jalapeños.
Cook notes
- Choose potatoes similar in size so they finish together.
- Do not wrap in foil for the oven finish; exposed skin crisps.
Storage
Store potatoes and filling separately up to 4 days. Reheat, then add cold toppings.
Questions
Can I bake the potatoes entirely in the oven?
Yes. Bake at 425°F for 45 to 60 minutes.
Can I make these vegetarian?
Use two cans of lentils or an extra can of black beans in place of turkey.
Are they freezer-friendly?
Freeze the cooked turkey filling up to 2 months. Freshly cooked potatoes have better texture than frozen ones.
