Greek Chicken Power Bowls
Lemony oregano chicken, crunchy vegetables, herby rice, and feta yogurt sauce built for genuinely good meal prep.
Directions
Marinate
Toss chicken with olive oil, lemon zest, 2 tablespoons lemon juice, garlic, oregano, and salt. Rest 15 minutes while you prep the vegetables.
Cook
Sear chicken in a hot skillet 5 to 6 minutes per side, until browned and 165°F. Rest 5 minutes before slicing.
Make the sauce
Mix yogurt, half the feta, dill, 1 tablespoon lemon juice, and a pinch of salt. Thin with water as needed.
Season the rice
Fold a squeeze of lemon and a spoonful of dill into warm rice.
Assemble
Divide rice, chicken, cucumber, tomatoes, onion, olives, and remaining feta. Add sauce just before eating.
