Freezer Breakfast Burritos
Fluffy eggs, crisp potatoes, sausage, peppers, and cheese wrapped for grab-and-go mornings that do not taste like compromise.
Directions
Crisp the potatoes
Cook potatoes in olive oil in a large skillet until browned and tender. Transfer to a bowl.
Cook filling
Brown sausage and bell pepper in the same skillet. Drain excess fat and add to potatoes.
Scramble
Whisk eggs, milk, salt, and pepper. Cook over medium-low, stirring gently, until just set. Cool all fillings for 10 minutes.
Roll
Divide potatoes, sausage mixture, eggs, and cheese among tortillas. Fold sides in and roll tightly.
Freeze and reheat
Wrap individually and freeze. Microwave unwrapped in a damp paper towel for 2 to 3 minutes, turning halfway, then crisp in a skillet if desired.

Can I add salsa inside?
It can make burritos soggy. Serve salsa on the side or use a thick, drained salsa sparingly.
