Weeknight Thai Basil Beef with Crispy Fried Eggs
Savory ground beef, garlic, chiles and Thai basil cook in a glossy fish-sauce stir-fry, then land beside jasmine rice and crisp-edged fried eggs.
Directions
Start the jasmine rice
Combine the rinsed rice and 2 cups water in a medium saucepan. Bring to a boil, cover, reduce the heat to low and cook for 15 minutes. Remove from the heat and let it rest, still covered, for 10 minutes before fluffing. The beef can be cooked while the rice rests.
Mix the sauce before the pan gets hot
Whisk the oyster sauce, fish sauce, light soy sauce, dark soy sauce if using, sugar and 3 tablespoons water in a small bowl until the sugar dissolves. Having the sauce ready prevents the garlic and chiles from scorching while you measure.
Brown the beef hard
Heat a wide 12-inch skillet over medium-high until a drop of water sizzles immediately. Add 1 tablespoon oil and the beef, spread it into a thin layer, and leave undisturbed for 2 minutes. Break it into small craggy pieces and cook for 3 to 4 minutes more until deeply browned but not dry.
Bloom the shallot, garlic and chiles
Push the beef to the outer edge of the skillet. Add the shallot to the center and cook for 1 minute, then add the garlic and chiles and stir for 30 seconds until fragrant. Fold everything together, keeping the heat high.
Glaze and finish the beef safely
Pour in the prepared sauce and toss continuously for 1 to 2 minutes until it bubbles and coats the beef without leaving a pool in the skillet. Check a few of the largest beef pieces with an instant-read thermometer; ground beef should reach 160°F.
Wilt in the Thai basil
Remove the skillet from the heat and fold in 1 1/2 cups basil leaves. Toss for 30 to 45 seconds, just until glossy and wilted, then transfer the beef to a warm bowl. Reserve the remaining fresh basil for serving.
Fry crisp-edged eggs
Wipe out the skillet carefully, return it to medium-high heat and add the remaining tablespoon oil. Crack in the eggs, season with salt and pepper, and fry for 2 to 3 minutes until the whites are set and the edges are brown and lacy. For anyone at higher risk from undercooked eggs, use pasteurized eggs or cook until the yolks and whites reach 160°F.
Build the rice bowls
Divide the hot jasmine rice among four bowls. Spoon the glossy basil beef alongside it, top each serving with a fried egg and scatter over the reserved fresh basil. Serve immediately so the egg edges remain crisp.

- Ground pork, chicken or turkey can replace the beef. Cook pork to 160°F and poultry to 165°F; lean poultry may need an extra teaspoon of oil.

Storage
Cool the beef and rice promptly and refrigerate them in separate shallow airtight containers for up to 4 days; prepare fresh eggs when possible. Reheat the beef in a skillet with 1 tablespoon water and the rice covered with a splash of water until both reach 165°F. Freeze the cooked beef, without basil garnish or eggs, for up to 2 months.

Why did my Thai basil beef turn watery instead of glossy?
The skillet was probably crowded or not fully hot, so the beef released liquid before browning. Use a wide 12-inch pan, leave the beef alone for the first 2 minutes, and let any excess moisture evaporate before adding the sauce.
Can I make the beef mixture ahead?
Yes. Cook and chill the beef mixture for up to 4 days, but hold back the fresh basil garnish. Reheat to 165°F with a spoonful of water, then add fresh basil and a newly fried egg.
