Crispy flour tortillas packed with mild taco beef and plenty of melty cheese—a fast, low-drama dinner built for dipping.
Heat a large skillet over medium-high. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until browned and 160°F. Drain excess grease if needed.
Stir in taco seasoning and water. Cook for 2 minutes, stirring, until the beef is evenly coated and the liquid has mostly evaporated.
Lay out the tortillas. Sprinkle cheese over one half of each, add a thin layer of beef, then add a little more cheese. Fold the empty half over the filling.
Wipe out the skillet and lightly coat it with oil or butter. Cook quesadillas over medium heat for about 2 minutes per side, working in batches, until golden and the cheese is fully melted.
Rest for 1 minute, then cut into wedges. Serve with mild salsa, sour cream, or ranch for dipping, and keep spicy toppings on the side.
