Mini Beef Crunchwraps for Kids
A smaller, simpler homemade crunchwrap with taco beef, melted cheese, a crispy center, and just enough sour cream to hold it all together.
Directions
Make the taco beef
Cook the ground beef over medium-high for 6 to 8 minutes until browned and 160°F. Drain excess grease, then stir in taco seasoning and water and cook for 2 minutes.
Build the centers
Place each large tortilla flat. Add a small mound of beef and cheese in the center. Top with a tostada shell or a compact layer of tortilla chips, then spread with a little sour cream. Add lettuce and tomato if your kids like them.
Fold the crunchwraps
Fold the tortilla edge toward the center, then keep pleating and folding around the filling until it is enclosed. If the center will not close, place a small tortilla scrap over the opening before finishing the folds.
Toast folded-side down
Heat a lightly oiled skillet over medium. Place each crunchwrap folded-side down and cook for 2 to 3 minutes until sealed and golden. Flip and cook another 2 minutes.
Rest, cut, crunch
Let the crunchwraps rest for 2 minutes before cutting in half. Serve with mild salsa or queso for dipping.

Use a handful of sturdy tortilla chips arranged in one flat layer. Avoid thin chips that turn soft immediately.
Can I make these without sour cream?
Yes. Use a tablespoon of queso, a thin layer of refried beans, or simply leave it out.
Can I make smaller ones?
Yes, but use smaller amounts of filling. The key is leaving enough tortilla around the outside to fold completely over the center.
