20-Minute Cheesy Scallion Ground Beef

Directions
Soften the onion
Heat olive oil in a large skillet over medium-high. Add onion and cook for 3 to 4 minutes until softened at the edges.
Brown the beef
Add ground beef and spread it across the skillet. Leave it undisturbed for 2 minutes, then break it into small crumbles and cook for 5 to 7 minutes more until browned and 160°F. Spoon off excess grease.
Season the skillet
Stir in garlic, smoked paprika, Worcestershire, oregano, salt, and pepper. Cook for 1 minute, scraping up the browned bits so the seasonings coat every crumble.
Fold in the cheese
Remove the skillet from the heat. Fold in three-quarters of the cheddar and half the scallions until the cheese melts into the hot beef.
Finish and serve
Transfer to a serving bowl and top with the remaining cheddar and scallions. Add hot sauce if you like and serve as-is or spoon over tortillas, toast, baked potatoes, or rice.
