Cottage Cheese Frittata with Tomatoes & Green Peppers

A whole sugar pumpkin becomes an autumn centerpiece filled with buttery rice, apricots, raisins, prunes and toasted nuts, then bakes until the shell slices tenderly at the table.
Combine rinsed rice, 1 1/2 cups water and 1/2 teaspoon salt in a saucepan. Bring to a boil, cover, reduce heat to low and cook 8 minutes. The grains should be partly tender with a firm center. Spread on a tray to cool 10 minutes.
Heat the oven to 350°F. Wash and dry the pumpkin. Cut a 5-inch lid around the stem with the knife angled inward so the lid cannot fall through. Scrape out seeds and stringy fibers without piercing the shell; trim a very thin slice from the base only if it will not stand level.
Brush the interior and cut rim with 1 tablespoon melted butter. Sprinkle inside with the remaining 1/2 teaspoon salt. Set the pumpkin in a snug baking dish or Dutch oven that will catch any syrup.
Combine cooled rice, apricots, raisins, prunes, walnuts, almonds, 2 tablespoons honey, cinnamon, cloves and 2 tablespoons melted butter. Fold gently so the grains remain separate.
Spoon the mixture loosely into the pumpkin, filling no more than three-quarters full. Pour in the hot water. Drizzle with the remaining tablespoon honey and butter, then set the lid on top.
Cover the dish loosely with foil and bake 60 minutes. Remove foil and bake 35 to 55 minutes more, until a thin knife slides through the pumpkin wall with little resistance and the rice is tender. If the top browns too quickly, return the foil.
Rest 15 minutes so steam settles and the filling finishes absorbing moisture. Transfer carefully to a rimmed platter using two broad spatulas; the shell will be soft.
Remove the lid and cut the pumpkin from rim to base into eight petals. Spoon rice over each wedge, including some sweet pumpkin flesh, and scatter with pomegranate arils if using.

Cool leftovers within 2 hours and refrigerate rice and pumpkin together in shallow containers for up to 4 days. Reheat covered at 350°F with a splash of water until steaming hot, or microwave individual portions to 165°F. Freeze portions up to 2 months; the pumpkin will soften further after thawing.
Overfilling, a punctured shell or baking past tender can cause a split. Leave expansion room, scrape gently and start testing before the maximum time.
Parcook the rice and mix the filling a day ahead, but keep them refrigerated separately. Cut and fill the pumpkin shortly before baking so its raw interior does not weep.
Serve the tender flesh attached to each wedge. Whether the skin itself is pleasant depends on the variety; diners can easily leave a firm rind behind.
