A 9-by-13-inch dish is the standard family casserole shape, but actual capacity and corner design vary. Measure inside dimensions and depth rather than relying only on the name.
Eight-inch squares
An 8-by-8 or 9-by-9 pan suits brownies, small casseroles, and halved recipes. Switching between them changes surface area enough to affect thickness and timing.
Glass behavior
