Why rim height, metal color, and actual dimensions matter more than a fancy brand name.
Buy the right size
A standard half-sheet pan is roughly 18 by 13 inches and fits most home ovens. It offers enough room for food to roast instead of steam. Measure the inside of compact ovens before ordering.
Choose bare aluminum
Heavy-gauge bare aluminum heats quickly and browns consistently. Dark nonstick pans often brown bottoms faster, while thin pans can warp under high heat.
Rims matter
A one-inch rim contains juices and lets you stir vegetables without launching them onto the oven floor. Flat cookie sheets are excellent for cookies but less versatile for dinner.
Use a rack selectively
A fitted wire rack is valuable for wings, bacon, and breaded cutlets. For vegetables and potatoes, direct contact with hot metal gives better browning.
Own two
Two matching half sheets are more useful than one luxury pan. They let you avoid crowding, separate foods with different cook times, and rotate halfway through roasting.
