Golden halloumi and spiced chickpeas turn a bowl of greens and tomatoes into dinner, finished with crunchy sourdough and a punchy parsley-mint dressing.
Heat the oven to 425°F with a rack in the upper third. Spread the chickpeas on a clean towel and pat them thoroughly dry, discarding any loose skins. Moisture is the main obstacle to crisp edges.
Toss the dry chickpeas on a rimmed sheet pan with 1 tablespoon olive oil, the cumin, paprika, 1/4 teaspoon salt and 1/4 teaspoon pepper. Roast for 20 to 24 minutes, shaking the pan twice, until dry on the surface and crisp at the edges but still creamy inside.
While the chickpeas roast, combine the parsley, mint, garlic, Dijon, lemon zest, lemon juice, 1/3 cup olive oil, water, 1/4 teaspoon salt and remaining 1/4 teaspoon pepper in a blender or small food processor. Pulse until spoonable with fine herb flecks; do not blend until completely smooth.
Brush both sides of the bread with 1 tablespoon olive oil. Toast directly on the oven rack for 4 to 6 minutes, turning once, until crisp and browned at the edges. Cut each slice diagonally into two sturdy triangles and spoon a little herb dressing over the tops.
Heat the remaining 1 tablespoon olive oil in a large nonstick or well-seasoned skillet over medium-high heat. Add the halloumi in one layer and cook for 1 to 2 minutes per side, turning with tongs, until deeply golden on at least two sides. Transfer immediately to a plate; halloumi firms as it cools.
Place the mixed greens, spinach and tomatoes in a wide bowl. Add 3 tablespoons herb dressing and the remaining 1/4 teaspoon salt, then toss gently. Add more dressing only if the leaves still look dry; overdressing would wilt them beneath the warm toppings.
Divide the dressed greens among four shallow bowls. Top evenly with the hot chickpeas, golden halloumi cubes and tomatoes, then tuck two herb-dressed toast triangles into each bowl, matching the photographed presentation. Spoon the remaining dressing around the salad and serve at once.
