Sticky Sesame-Ginger Ribeye Bites
Fast-seared ribeye bites lacquered in a garlicky honey-soy glaze with ginger, sesame, and scallions.
Directions
Mix the glaze
Whisk soy sauce, honey, rice vinegar, sesame oil, ginger, garlic, cornstarch, and 2 tablespoons water until the cornstarch is fully dissolved.
Dry and season the beef
Pat the ribeye pieces very dry and season with salt and pepper. A dry surface is essential because small pieces can steam quickly.
Sear in two batches
Heat a large skillet over high until very hot. Add half the oil and half the beef in one layer. Sear for about 60 seconds per side until browned, then transfer to a plate. Repeat with the remaining oil and beef.
Glaze the bites
Lower the heat to medium. Whisk the sauce again, pour it into the skillet, and simmer for 60 to 90 seconds until glossy and thick enough to coat a spoon. Return the beef and any juices; toss for 30 seconds.
Serve immediately
Remove from the heat so the ribeye stays tender. Spoon over rice and finish with scallions and sesame seeds.

Storage

Can I add vegetables?
Yes. Stir-fry 3 cups of quick-cooking vegetables first, transfer them out, and return them with the beef after the sauce thickens.
Why did my beef turn gray?
The skillet was not hot enough or the pan was crowded. Pat the beef dry and cook no more than half at once.
Can I make the sauce ahead?
Yes. Whisk it up to 3 days ahead and refrigerate. Stir very well before adding because the cornstarch settles.
