Spicy Pancetta Vodka Rigatoni
Silky tomato-cream rigatoni with crisp pancetta, chile heat, Parmesan, and basil—the weeknight pasta that feels like going out.
Directions
Boil the pasta
Cook rigatoni in salted water until 1 minute shy of al dente. Reserve 1 1/2 cups pasta water.
Crisp the pancetta
Cook pancetta in a wide skillet until browned. Transfer half to a paper towel and leave the rendered fat in the pan.
Build the sauce
Add garlic, red pepper flakes, and tomato paste. Cook until the paste turns brick red, then add vodka and simmer 1 minute.
Make it silky
Add crushed tomatoes and simmer 6 minutes. Lower heat and stir in cream, Parmesan, and 1/2 cup pasta water.
Finish
Add rigatoni and toss until glossy. Fold in basil and top with the reserved crisp pancetta.

Does the vodka taste alcoholic?
No. It cooks down and mainly helps carry aromatic tomato flavor.
Can I make it vegetarian?
Yes. Omit pancetta and start with 2 tablespoons olive oil plus a pinch of smoked paprika.
Can I make it less spicy?
Cut the red pepper flakes to a pinch or omit them entirely.
