Roasted Garlic Chicken & Mushroom Pasta
Grilled chicken, mushrooms, cherry tomatoes, and Parmesan in a glossy roasted-garlic cream sauce.
Directions
Cook the pasta
Boil pasta until just shy of al dente. Reserve 1 cup pasta water.
Sear the chicken
Season chicken and cook in olive oil 4 to 6 minutes per side until 165°F. Rest, then slice.
Brown the vegetables
Add mushrooms to the skillet and brown well. Add tomatoes for the final 2 minutes.
Make the sauce
Stir in roasted garlic, broth, and cream. Simmer 3 minutes, then add Parmesan.
Toss
Add pasta and enough pasta water to make the sauce glossy. Top with sliced chicken and parsley.
