No-Bake Peanut Butter Oat Bars
Chewy, salty-sweet bars with a thin chocolate shell—ten minutes of work and no oven required.
Directions
Line the pan
Line an 8-inch square pan with parchment.
Warm the binder
Microwave peanut butter and honey for 30 to 45 seconds until fluid. Stir in vanilla and salt.
Mix
Fold in oats and flax until evenly coated. Press very firmly into the pan.
Top
Melt chocolate chips with coconut oil. Spread a thin layer over the bars and sprinkle with flaky salt.
Chill
Refrigerate 1 hour, then lift out and cut into 12 bars.

They are when made with certified gluten-free oats.
Can I reduce the honey?
A little, but the bars rely on it for binding. Reduce by no more than 2 tablespoons.
