Toss the grated zucchini with 1/2 teaspoon kosher salt in a colander and let it stand 10 minutes. Transfer it to a clean kitchen towel and squeeze firmly over the sink until no more liquid drips out. You should have about 1 1/2 packed cups.
Stir the Greek yogurt with the lime zest, 1 tablespoon lime juice, garlic, half of the jalapeño, 1 tablespoon cilantro, and a pinch of the remaining salt. Refrigerate while the fritters cook.
In a large bowl, whisk the eggs, flour, cornmeal, baking powder, cumin, black pepper, and remaining salt into a thick batter. Fold in the squeezed zucchini, corn, scallions, feta, remaining cilantro, and remaining jalapeño. Let the batter rest 5 minutes so the cornmeal can hydrate.
Heat 2 tablespoons oil in a 12-inch skillet over medium heat until shimmering, about 2 minutes. Scoop four packed 1/4-cup portions into the skillet and flatten each to a 3-inch round about 1/2 inch thick.
Cook 3 to 4 minutes per side until deeply golden, firm in the center, and at least 160°F on an instant-read thermometer. Transfer to a wire rack set over a sheet pan. Add the remaining oil as needed and cook the second batch; reduce the heat if the crumbs darken before the centers set.
Season the hot fritters with a small pinch of salt. Serve two per person with the jalapeño-lime yogurt, extra lime wedges, and dressed greens if using.
