Stir apple cider vinegar, warm water, granulated sugar, and 3/4 teaspoon salt in a medium bowl until dissolved. Add carrot and daikon, press them below the liquid, and leave at room temperature for at least 20 minutes while you cook.

Split the baguettes without cutting all the way through. Toast cut-side up under a broiler for 1 to 2 minutes, watching constantly. Mix mayonnaise with sriracha and spread it over both cut sides.
Drain the pickles thoroughly. Fill each baguette with cucumber, hot caramel pork, pickles, cilantro, and jalapeño. Serve immediately so the bread stays crisp.
