Senegalese-Style Chicken Yassa with Onion Sauce & Rice

Lemon-mustard chicken roasts until deeply browned, then meets a generous slow-cooked onion sauce and turmeric rice for a bright family platter.

Directions

  1. Marinate the chicken and onions

    Whisk the lemon zest and juice, mustard, garlic, 1 tablespoon oil, 1 1/2 teaspoons salt and pepper in a nonreactive bowl. Add the chicken, onions and bay leaves and turn thoroughly to coat. Cover and refrigerate for 4 hours, turning once; do not marinate longer than 12 hours.

  2. Separate and dry

    Heat the oven to 425°F. Lift the chicken from the marinade, letting the onions fall back into the bowl. Place chicken skin-side up on a rimmed sheet pan and pat the exposed skin dry. Use clean utensils and discard any marinade that cannot be cooked immediately.

  3. Roast the chicken

    Roast for 35 to 45 minutes, rotating the pan once, until deeply browned and every piece reaches at least 165°F away from bone; thighs and drumsticks are most tender around 175 to 185°F. Rest for 5 minutes.

  4. Build the onion sauce

    While the chicken roasts, heat the remaining 1 tablespoon oil in a wide Dutch oven over medium heat. Add all the marinated onions, bay leaves and liquid. Cook for 15 minutes, stirring often, until the onions soften and begin to color. Add the broth, bring to a lively simmer and cook uncovered for 15 to 20 minutes until jammy but still spoonable. Stir in olives if using and remove the bay leaves.

  5. Cook the turmeric rice

    Combine the rinsed rice, 3 cups water, turmeric and remaining 1/2 teaspoon salt in a medium saucepan. Bring to a boil, cover, reduce to low and cook for 15 minutes. Remove from the heat, rest covered for 10 minutes, then fluff.

  6. Finish the platter

    Taste the onion sauce and adjust with salt, mustard or a squeeze of lemon only after it has reduced. Spread rice on a warm platter, arrange chicken over it and spoon some onion sauce around the pieces, serving the rest alongside. Add scallions and offer hot sauce or fresh chile at the table.

  • Use 2 1/2 lb bone-in chicken thighs only for more even cooking; begin checking them at 35 minutes.
  • For a boneless version, use 2 lb chicken thighs and roast at 425°F for about 22 to 28 minutes, checking for 165°F.
  • Brown rice can replace white rice, but cook it separately according to its package because it needs substantially more time and water.

  • The 5 1/2-hour total includes a 4-hour hands-off marinade, 25 minutes of preparation, 65 minutes of cooking and resting time.
  • Keep the communal sauce mild and offer chile at the table so each diner controls the heat.
  • A mandoline makes quick work of four onions, but always use its hand guard and stop before the onion becomes too small to hold safely.
  • Because the marinade touches raw poultry, it must be brought to a full simmer and cooked as directed; never use it as an uncooked finishing sauce.
  • Olives add salinity, so taste the reduced sauce before adding any extra salt.

Storage

Cool chicken, sauce and rice in separate shallow containers within 2 hours and refrigerate for up to 4 days. Reheat chicken and sauce covered at 325°F or in the microwave and rice with a spoonful of water until every component reaches 165°F. Freeze chicken and onion sauce for up to 2 months; make fresh rice after thawing.

Questions

Can I marinate chicken yassa overnight?

Yes, but cap the marinade at about 12 hours. Longer exposure to lemon can make the outer meat soft and the skin harder to brown.

Why are the onions not browning?

Four onions release a great deal of water. Keep the pan wide, cook uncovered and stir often; they will soften first and color as the liquid evaporates. Do not raise the heat so high that the mustard scorches.

Can I cook the chicken directly in the onion sauce?

You can simmer fully browned chicken in the sauce, but the skin will soften. The separate roasting method preserves browned skin and makes the chicken's safe internal temperature easier to verify.
