Instant Pot Family Taco Soup

Ground turkey, beans, corn and tomatoes make a spoonable taco-night soup with crunchy toppings and heat added only at the table.

Directions

  1. Brown the turkey

    Select Sauté, add oil, turkey and onion, and cook 5 to 6 minutes, breaking up the meat, until no pink remains.

  2. Season and deglaze

    Stir in taco seasoning for 30 seconds. Pour in broth and scrape the cooker base until completely clean. Cancel Sauté.

  3. Layer the soup

    Stir in both beans and corn. Pour both cans of tomatoes over the top without stirring them into the base.

  4. Pressure cook

    Lock the lid and cook on High Pressure for 5 minutes. Allow a 10-minute natural release, then carefully vent the remaining pressure.

  5. Adjust the bowl

    Open when the float valve drops. Stir in lime juice. For a thicker soup, mash some beans against the side; for a thinner soup, add warm broth.

  6. Serve taco-bar style

    Ladle into bowls and let each person add avocado, cheese, sour cream, crushed chips and hot sauce.

  • The base is mild; adults can add chipotle hot sauce or jalapeños individually.

  • Never force the lid. Open only after pressure is fully released and the float valve has dropped.

Storage

Refrigerate up to 4 days or freeze up to 3 months. Reheat to 165°F and store crunchy and dairy toppings separately.

Questions

Can I skip browning the turkey?

It is not recommended. Browning breaks it into even crumbles and ensures it is fully separated before pressure cooking.

Can I add rice?

Not without changing liquid and timing. Serve the finished soup over cooked rice instead.

How do I make it thicker?

Mash one cup of beans and soup, stir it back in and let the pot stand uncovered for 3 minutes.
