Crispy Honey-Lime Chicken Rice Bowls

Directions
Coat the chicken
Pat chicken dry and toss with cornstarch and salt until lightly coated.

Transfer chicken out. Add peppers to the same pan and cook 3 minutes so they stay crisp.
Glaze
Whisk honey, soy sauce, lime juice, rice vinegar, and ginger. Return chicken and toss until the glaze bubbles and clings.
Serve
Spoon over rice with cucumber, sesame seeds, and scallions.
