Crispy Sheet-Pan Garlic Parmesan Chicken
Juicy chicken, crackly Parmesan edges, and roasted broccoli on one pan—with a lemony pan sauce hiding underneath.
Directions
Heat the pan
Heat the oven to 425°F. Place a large rimmed sheet pan in the oven while it heats; the hot metal helps the potatoes start browning immediately.
Start the potatoes
Toss the potatoes with 1 tablespoon olive oil, half the salt, and several grinds of pepper. Carefully spread them cut-side down on the hot pan and roast for 10 minutes.
Build the crust
Mix Parmesan, panko, garlic, Italian seasoning, lemon zest, remaining salt, and pepper. Brush chicken with 1 tablespoon oil and press the crumb mixture firmly onto both sides.
Finish the pan
Turn the potatoes, add broccoli tossed with the last tablespoon of oil, and nestle in the chicken. Roast 15 to 18 minutes, until chicken reaches 165°F and the crust is deep golden.
Brighten and serve
Squeeze half the lemon over the entire pan. Let the chicken rest 5 minutes, then serve with the pan-roasted lemony juices spooned over top.

Can I prep it ahead?
Mix the crumb coating and cut the vegetables up to 2 days ahead. Coat the chicken just before baking.
Why did the coating fall off?
The chicken was probably too wet. Pat it very dry and press the coating on firmly.
Can I use bone-in thighs?
Yes, but roast them separately for roughly 35 to 45 minutes and verify 165°F in the thickest part.
