Crispy Beef & Cheese Taco Roll-Ups
Little baked tortilla rolls stuffed with seasoned beef and gooey cheese—easy to hold, easy to dip, and especially good for kids.
Directions
Heat the oven
Heat the oven to 425°F. Line a sheet pan with parchment or foil and lightly coat it with cooking spray.
Cook the filling
Brown ground beef in a skillet over medium-high for 6 to 8 minutes, breaking it into fine crumbles, until it reaches 160°F. Drain excess grease. Stir in taco seasoning and water and cook 2 minutes.
Roll them tight
Place a small strip of cheese and about 2 tablespoons beef near one edge of each tortilla. Roll tightly and place seam-side down on the prepared pan.
Bake until crisp
Brush the tops lightly with olive oil or melted butter. Bake for 10 to 12 minutes, turning once if you want all-around browning, until the tortillas are crisp and the cheese is melted.
Cool just enough to grab
Let the roll-ups stand for 3 minutes so the filling sets. Serve warm with your favorite mild dipping sauces.
