Brown Sugar Peach Upside-Down Skillet Cake
Juicy summer peaches caramelize beneath a tender vanilla-yogurt cake, then flip into a glossy cast-iron showpiece.
Directions
Prepare the skillet
Heat the oven to 350°F. Melt 4 tablespoons butter in a 10-inch cast-iron skillet over medium-low heat. Add brown sugar and stir for 1 minute until glossy. Remove from heat and arrange peach wedges in a snug single layer over the sugar mixture.
Mix the dry ingredients
Whisk flour, baking powder, baking soda, kosher salt, and cinnamon in a medium bowl until evenly combined.
Cream the batter
Beat the remaining 6 tablespoons softened butter with granulated sugar for 2 to 3 minutes until pale and fluffy. Beat in eggs one at a time, then mix in vanilla.
Finish the batter
Whisk yogurt and milk together. Add the dry ingredients to the butter mixture in three additions, alternating with the yogurt mixture in two additions. Mix only until the last streaks of flour disappear.
Bake
Spoon batter over the peaches and gently spread it to the skillet edges without disturbing the fruit. Bake 35 to 42 minutes, until deeply golden and a tester in the center comes out with a few moist crumbs; the center should be about 200°F if checked with a thermometer.
Rest and flip
Cool in the skillet exactly 10 minutes. Run a thin knife around the edge, place a large heat-safe serving plate over the skillet, and invert both together using oven mitts. Leave the skillet in place for 1 minute, then lift it away and replace any peach slices that stick.
Serve
Let the cake cool at least 20 minutes more before slicing. Serve warm or at room temperature with whipped cream or vanilla ice cream if desired.

Yes. Thaw and drain them thoroughly, then pat dry. Excess water can thin the caramel and make the cake soggy.
