Brown Butter Sage Gnocchi with Crispy Kale & Walnuts

Directions
Toast the walnuts
Toast the walnuts in a wide dry skillet over medium heat for 3 to 4 minutes, stirring often, until fragrant. Transfer to a plate so they do not scorch.
Cook the gnocchi
Boil the gnocchi in well-salted water until they float, then cook 30 seconds more. Reserve 1/3 cup cooking water and drain thoroughly.
Crisp the kale
Heat olive oil and 1 tablespoon butter in the skillet over medium-high. Add kale, season with half the salt, and cook 3 to 4 minutes until tender with crisp edges. Transfer to the walnut plate.
Brown the butter
Melt the remaining 4 tablespoons butter in the skillet. Add sage and cook until the milk solids turn amber and smell nutty, 2 to 3 minutes. Stir in garlic for the final 30 seconds.
Crisp and sauce
Add drained gnocchi and cook undisturbed for 2 minutes, then toss until lightly golden. Lower the heat and add 1/4 cup cooking water, Parmesan, black pepper, 1 teaspoon lemon zest, and 1 tablespoon lemon juice. Toss until glossy, adding the remaining water only if needed.
Finish
Fold in the kale and walnuts. Taste for salt and lemon, then serve immediately with extra Parmesan and the crisp sage leaves.
